This blog is not a food recipe blog but i came across this interesting food menu on goat meat Igbo delicacy called Nkwobi and feel that someone may want to know how to prepare it.I am sure many of you must have had a taste of Nkwobi in some the joints around you.Now lets start:
Ingredients
1kg Cow leg
2 seasoning cubes
1/2 cup palm oil
Chilli pepper to taste
Chopped utazi leaf(as desired)
1 tsp ground ehuru seeds
1/4 cup ground crayfish
1/2tsp ground potash
1/4 cup ugba (oil bean), sliced
Salt to taste
Directions
Season the cow tail properly and cook till it is soft and you have a rich stock, usually about an hour
In a pot, make a paste with the ground potash using the palm oil
Place on heat and stir
Add the onions, pepper, seasoning cubes and crayfish
Pour in the cooked cow leg with little stock
Cook for about 5minutes
Add more stock if it is too dry
Add the ugba and the ground ehuru seeds
Lower the heat, taste for salt
Allow the flavour to blend for about a minute and serve
Nkwobi is usually served in a serving mortar
Garnish with chopped Utazi leaves and onions
